We’ll begin with a cuppa and tastings of various marmalades to awaken your palate
and spark inspiration. Then we dive into the essentials—from choosing the
right fruit and prepping jars, to mastering the elusive "setting
point" and ensuring proper bottling and storage.

You’ll learn the science behind the magic, including the roles of pectin, acidity, and
temperature—and then roll up your sleeves for the hands-on part: taking 
citrus straight from the tree and crafting your own batch of tangy grapefruit
marmalade. You’ll even have the option of adding a little bit of local Gin to
your batch, to give a whole new flavour experience.

With plenty of expert guidance throughout, plus tips on avoiding common pitfalls, you’ll
leave confident and ready to make the most of citrus season. Whether for your
own pantry or as thoughtful, homemade gifts.

Knowledge required

This class is appropriate for those 15yrs and over. Absolute

beginners, as well as those with some preserving experience.

What you'll get

Each participant will take home a jar of freshly made marmalade,
full workshop notes & recipes, as well as the knowledge, skills and
confidence to keep preserving at home.

What to bring

Participants must wear closed-in non-slip shoes.

Everything you need for the class will be provided, however if you have a favourite

 small knife for cutting fruit, please bring it.
